Ever since I was a kid, watermelon has been one of my favorite fruits. Everything about it reminds me of summer – the refreshing, juiciness of it, the bright pink-red color, and the image of sitting on the back porch with watermelon juice running down my chin.

The latter is now what I see with my own kids, but for me, watermelon has taken on many more uses than just a cooling summer afternoon snack. Watermelon feta or goat cheese salads, watermelon gazpacho, watermelon-based cocktails, and watermelon sorbet are all nutritious and delicious combinations that take my favorite fruit to a whole new level. As does this watermelon salsa, which was featured in the August issue of Today’s Dietitian Magazine.

Watermelon, cucumber, red onion, and jalapeno come together for a flavorful and refreshing twist on a classic salsa. Serve with chips, over fish tacos, or with some grilled chicken.

Ingredients
  • 3 cups finely diced watermelon
  • 1½ cups finely diced, peeled English cucumber
  • ½ cup chopped red onion
  • 1-2 jalapeno peppers, seeded and minced
  • ¼ cup chopped cilantro
  • ¼ cup chopped mint
  • ¼ cup lime juice
  • ¼ teaspoon Kosher salt
Instructions
  1. Combine watermelon, cucumber, onion, jalapeno, cilantro, mint, and lime juice in mixing bowl. Season with salt.
  2. Refrigerate for at least 30 minutes to let the flavors meld.

    Whoa! Joey would devour a bowl of this watermelon goodness… Mom might too! My favorite summer childhood memory is of course eating dinner on my parents patio— usually grilled steaks with fresh strawberry salad! Come to think of it I think all of my favorite childhood memories involve food. 🙂

  3. I ADORE watermelon too! So refreshingly crisp and sweet! We used to eat it in the summer with a German recipe called rollkuchen. Which is basically deep fried dough with honey on it. The watermelon made it healthy 😉 Pretend world I live in. ANYWAY. Great recipe lady!
